What’s Been Happening. I am writing this from the comfort of my couch looking at my new floors and rug. Doing the floors this past week was a huge project and I wish we had done it when we were on vacation rather than a hotel in Covington but it was totally worth it. Already working on ideas for the next big project in the house which will be the boys bathroom counter, cabinets and shower. We bought this house 10 years ago with the plan to renovate the whole thing. Hoping that happens… eventually.
Food and Drink. I am working on doing a video of me making gumbo. I have so many great go to recipes and I don’t share them as often as I should. This week I wanted to share a fast and quick recipe that you can make in the Instapot or the slow cooker. I still don’t have an Instapot (the shame) but I know that most things translate from one to the other. Just less time on the IP.
Turkey Meatballs and Roasted Broccoli: I use the premade meatballs from Target. You can get them in the frozen food section. I also have used the turkey meatballs they sell at our local grocery, Rouses. In the crock pot I add the frozen meatballs, two 28oz cans of crushed tomatoes, 3 tbsp. Italian Seasoning, 1 tbsp. granulated garlic. I put the crock pot on for about 4 hours. An hour before they are finished I cut two heads of broccoli and place on a baking sheet. Toss with olive oil, garlic and red pepper flakes. Bake at 400 to 450 (depending on how crispy you like your broccoli). Bake for 30 to 40 minutes. Serve broccoli hot and top with meatballs and parmesan. Typically I will make noodles for the boys or spaghetti squash.
News. In case you missed this video last week you really should watch it. #hardestjobintheworld
Family. Tomorrow is Paxton’s Gotcha Day! October is adoption for our family but November is National Adoption Month. In honor of Peyton and Paxton I wanted to share our adoption story again here. If you have ever thought about adoption or foster care or just want to ask us a question we are open to talking just message us here.
Social. Are you interested in improving your skin care routine? Check this event out!
Home. When we were moving furniture for the flooring to be done we pulled up the big rug in our living room. Its crazy how dirty they get even when you are cleaning them. I decided to throw it out and replace it with THIS rug from Target. It’s a lot less gold when I received it today and the blue and gray areas are deep. I really love how much it coordinates with my new floors.
Beauty. I really enjoyed writing my first beauty post this week. I am not a beauty guru but I know what works for me. Friday when I went to see my esthetician she commented that she sees a big difference in my pore size and texture just in the last 12 weeks since I have been in for a visit. Keeping up with your skin really will pay off! If you missed the post check it out here
