Menu for the week of 10/1/17

 

We eat eggs a lot.  So much so that I go through about 4 cartons of 18 eggs a week.  Yes that is 72 eggs in 7 days.

Eggs are a staple breakfast item for us but they are also great for dinner or to top certain meals.  For instance the last few times I made chili I have been serving it over avocados and topping it with a over medium egg.  The yolk makes just about any meal more decadent and creamier so it’s a delicious item to add.

Eggs can also stand up on their own and be a main dish.  Things like frittatas and crustless quiche are easy and quick and can be paired with a simple salad.  This week I am incorporating lots of eggs into the menu.  It’s always fun to try something new and different.

Sunday: Open Face Omelet with Feta, Roasted Tomatoes and Spinach
Monday: Slow Cooker Red Beans and Rice
Tuesday: Cheesy Slow Cooker Salsa Chicken
Wednesday: Asparagus Pancetta Potato Hash
Thursday: Parmesan Broiled Tilapia
Friday: Spinach Mushroom Feta Crustless Quiche
Saturday: Chipotle Lime Chicken
