It is the second to last day of July. Seriously where has this summer gone? We are leaving on vacation in the morning and I am kind of really excited about doing a late summer trip this year. It was something for us all to look forward to this summer but it’s also the perfect way to start off the school year. We decided to forgo the big beach trip this year because we always end up at the pool so we are going to a kid friendly resort in Mississippi. I will fill y’all in on all the details when we get back!

I eat about every 2 to 3 hours during the day which means that in addition to my breakfast, lunch and dinner I am eating two to three snacks a day. Going on vacation had me a little worried about what I was going to eat for snacks. I usually have bulletproof coffee or a protein shake or something from the fridge. Being at the pool all day and staying at a hotel doesn’t really give me the opportunity to have a lot of stuff on hand. So for snacks I purchased a few prepackaged things that I know I can take with me and throw in the beach bag. These are some of my favorites for on the go snacks.
Food and Drink
Doing Keto I felt like I was getting into a rut of only having eggs for breakfast in the morning. I had seen several recipes for pancakes that were cream cheese and eggs but I wanted something that was going to be fluffier and have more of a pancake consistency. My friend Brandi shared a recipe with me last week that was amazing and tasted just like traditional pancakes. I had two of them with two scrambled eggs and stayed within my macros for breakfast.
Keto Pancakes – Fluffy
4 oz. cream cheese
2 tsp vanilla
4 tbsp coconut flour
1 1/2 tsp baking soda
Mix together and cook on the griddle like regular pancakes. Sugar free syrup and serve.
